Live Fire Table Grill: Ardor – Spanish for “burning”

Embrace the essence of open-air wood-fired cooking with this simple yet robust live fire table-style grill.
(That’s also portable!)

Crafted for durability and versatility, the Brasa grill boasts a sleek, matte black finish that complements any outdoor setting. 

It is designed with minimalism in mind,  consisting of a sturdy metal structure, complete with a pitched top frame that can serve as a convenient utility space for hanging produce, vegetables, chains, and tools for all-day smoking. It also incorporates a full width warming rack and resting rack.

Loving how quick and easy it is to cook some epic protein for the family on a Sunday arvo on my @firemate_hibachi_grills 

2/3 kettle full of @heatbeads and it cooked a 1.5kg pork roast, and two racks of lamb cutlets in 3 hours.

Straight out of Brisbane Water, this beautiful octopus was a solid catch! 

Charred octopus is one of my favourite foods, simply clean (remove guts, ink, innards & beak) and clean gunk from each sucker. 

Rinse to remove slime, cut off excess skin. 

Braise Tentacles ⤵️

4 litres / quarts water
1 onion , halved, skin on
6 garlic cloves , smashed (Note 2)
1 tsp black peppercorns (sub 1/2 tsp ground pepper)
2 tsp cooking salt (kosher salt)
3 tbsp lemon juice (or apple cider vinegar)
3 parsley stems (with leaves)
2 bay leaves , fresh or dried

Than Marinade overnight: ⤵️
1/2 cup extra virgin olive oil
6 garlic cloves , very finely minced (or use garlic press)
2 tsp lemon zest (one large lemon)
2 tbsp lemon juice
1 tsp dried red chilli flakes (red pepper flakes), optional
1/2 tsp each cooking/kosher salt and black pepper

Leave for 12-24 hours then chargrill over fire or on BBQ 🔥🔥🔥

I’ve had so many people ask about our stay in @orangecitycouncil over the weekend during @orangefoodweek where we got to experience @orangewineregion @orange360_allyearround and enjoy all the spoils this beautiful place has to offer. 

Our @airbnb was pretty spectacular, known as “The Hermitage” this gorgeous property hosted all 7 of us, in absolute comfort. We will definitely be back so we can forage and procure, then come home and cook in the beautiful kitchen.  This place is a must stay, shoot me a DM and I’m happy to share the details.

Bringing our weekend to a close, was an incredible degustation dining experience @charredkitchenbar 

The dishes were exquisite, the highlight - a Bombe Alaska. We decided to select our own wine line up, including:

What a ridiculous day of tasting some of @orangewineregion greatest vineyards! 

@brangayneoforangewines tasting, followed by @rosshillwines for some incredible drops with paired tasting plate. Finished off with @patinawines with amazing hospitality from Gerard. 

Privileged to taste some of the best from the region.

We said nothing went to waste. I smoked these Mahi frames for about two hours, infusing them with ironbark smoke. Then, I turned all that delicious flesh from inside the head, cheeks, and frame into a delicious Smoked Mahi Dip with toasted bread.

As things start to cool off a bit the Mahi were out in force, some epic fun with these blue and yellow beauties! 

Went out with a few of the boys to come home with this feast. All line caught, and not a bit of fish was wasted. Filleted with our Smokin’ Gauchos fillet/boning knife.

Its coming to the end of Blue-swimmer season and these beauties have been in the bite! All fresh and line caught, theres no better way than making a sweet chilli crab over woodfire in our @solidteknics WOK. 

Look, i’d love to say that I made this from scratch, and normally I would, but with the events of the last month and being super time poor on the weekend, the packet sauce mix from @aldiaustralia is second to none. Delicious, sweet and easy to make. 

Simply brown off the crab in oil till they change colour, add in your aromatics (garlic, onion), remove the crabs, add sauce, add noodles if choice, check back in the crab, BOOM.

🖤After the unexpected passing of my dear brother Ian, we needed to take a little time to heal. ❤️‍🩹

We took refuge in nature, found solace in the pine forests, no outside communications, no distractions. 

Whilst it was only a few short days, mother nature provided is with exploration, adventure, waterfalls, wildlife, and most importantly, fire. 

We communed, we gathered. We laughed, we cried. We remembered our brother for the short life he lived, and gave thanks for the life we have. 

R.I.P Ian, may you accompany us around every fire, joining us in spirit for all of our adventures 🕊️👊🏼

Every session I learn something more. New techniques, new methods thanks to @guyjam from @centeredceramics and thanks to @chefjasonroberts for being my phone a friend to make sure we done f@#! Up 🤣🔥

My purpose for making things from @lagunaclay Fire Clay, available from @keaneceramics is to create ceramic tools for cooking over fire that can be made by hand.

Fire plates, Tagines, Pots and so much more. Vessels that embrace the fire and can handle the heat and the change of temperatures. 

This bad boy is a mini wok / shallow bowl pan. Can’t wait to put it to use once done.

Being a cook, and not a chef, there’s a deep gratitude for the talent that surrounds us, especially here on the Central Coast. 

One such talent is that of Scott & Alastair of @yellowtailrestaurant - really pushing some boundaries and always working hard to keep things fresh and interesting. No easy Feat 🔥🤙🏼

A goal I set for 2024 was to work with my hands more where I could. A year ago I was inspired by @ryanpaulder  @loveryanceramics to create epic ceramics that could be used for all of our cooking endeavours. Pieces we could say were ours, and present them with pride. Bubbling away is @doingthethings_au a place where working with your hands is reinvigorated and celebrated. 

I’ve been fortunate to see what is possible when using ceramics on fire, and @chefjasonroberts has set a high bar with the incredible things you can make and cook with over flame. 

So here begins the journey with @centeredceramics Guy & Jen are beautiful humans, taking me on this journey to learn to make the pieces that I can use with fire cooking.

After 20 years of being out of the field, I felt it was time to reignite my love for ethically harvesting wild game meat. Very proud to be supported by @hunterselement in this journey who have provided me with the right gear to return to the bush. The quality and sustainability of Hunters Element aligns perfectly with our values. Keeping our country clean, and using recycled bottles to manufacture the bulk of their clothing range. 

Thanks to the guidance and support of @johnralley and @_wilderlife_ for coaching me and directing me through the process, i’m grateful for your wisdom and knowledge.

What a wild ride of food & flavours once again here in the Philippines. I love this place, the people are beautiful, and so much of the food is still traditional, cooked with traditional methods. 

The mix of old world and new world is so engaging from traditional suckling pig (Lechon) filled with flavour, to modern fine dining, the Philippines has it all!

Just a snippet of the food exploration here in - what a vibe! Everywhere is bustling, charcoal skewers being cooked on the streets and restaurants. Fresh seafood everywhere and whole pig know as “Lechon” on the spit.
