I was so inspired after having beef tartare at @osteriailcoccia @bamvino_pizza_wine_deli and then @marblebarandgrill recently that I decided I needed to try this myself. 

Thanks to @saratogaqualitymeats I bought a beautiful fresh eye fillet (tenderloin) to turn into this raw beef dish. Fresh ingredients are essential! 

Recipe thanks to @australianbeef 🥩🔥

400g beef sirloin, very well trimmed
1 eschallot, finely diced
2 tbsp finely chopped gherkins
1 tbsp finely chopped capers
2 tbsp finely chopped flat-leaf parsley
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
Tabasco sauce (optional)
4 organic egg yolks (optional)

To serve, sourdough toast and a green salad

Using a very sharp knife, dice the beef into ½cm cubes, discarding any fat.
Place into a mixing bowl with the eschallots, gherkins, capers, parsley and mustard and stir to combine. Season with the Worcestershire sauce and Tabasco (if using) along with some salt and pepper.
Place onto 4 plates using a ring mould. Make a slight indentation with the back of a spoon and drop an egg yolk on top of each (if using). Serve with sourdough toast and a green salad.

Without doubt, @saratogaqualitymeats is hands down the best butchery on the Central Coast and has access to some of the best protein around. And, whilst we have plenty of great butchers around, this is one of my favourites.

In particular their @rangersvalley Black Onyx sirloin is one of the best all round pieces of beef I have ever had. Big call I know.

I came home with a special haul for something I wanted to do a little different:

🥩 Grass Fed Eye Fillet 

Buying protein of this quality and at this price isn’t for everyone. However, if you look at it a little differently, we weren’t meant to be smashing protein like this every single day. We used to hunt, kill, eat our kill, and in between the hunts we ate a lot more conservatively. 

So thats what I try and do, is by epic protein and eat it in smaller quantities - quality over quantity any day of the week. 🔥🔥🔥

A great night out once again @marblebarandgrill the team going from strength to strength with their menu, protein quality and service. 

If you’re coming through the central coast, its a must stop, centrally located, and my recommendation - the 1kg T-Bone w/ chimmi, and the beef tartare are my favourites. 🔥

Summer is in full swing and how good is the seafood that comes along with it! 

Following on from our last post about using fresh prawns to make delicious rice paper rolls, here is something thats even EASIER than that - the classic fresh seafood platter!

Sourced locally from @casanova_seafood fresh prawns, blue swimmer crabs and some delicious sydney rock oysters. 

Plated up in some beautiful @loveryanceramics pottery, served with a bottle of @thomaswines @thomaswineshuntervalley 2019 Hunter Semillon & a simple mignonette for the oysters and you’re done!

With a fire ban happening in these extreme temps, we decided to try out some fresh seafood from a local spot @casanova_seafood and it’s bloody gem! 

Some of the freshest seafood to be found here on the coast, we decided to take these beautiful fresh prawns and turn them into rice paper rolls. 

A treat for the kids, they all got into helping making them. Fresh shallots & mint from the garden, grated carrot, a roast chook, lettuce and some hoisin sauce.

An incredible night at our local Neapolitan woodfire pizza place @laguneartisan with my close mates, and fellow wine lovers.

The apron is made from a supple bovine hide, thick enough to protect your chest from the heat but light enough that it isn’t uncomfortable wearing for 10+ hours of fire cooking. 

Our handmade gloves are made from a thicker leather, hand stitched and lined with a fire retardant inner lining 

Our beautiful knife rolls use one large piece of leather for the bulk of the body, folded and riveted to create the pockets. Bronze rivets and buckles/hardware finishes it all off perfectly.

Getting christmas ready around here, took the kids for a foraging expedition at the Pines - a beautiful campground within Olney State Forest. 

These stunning old pines produce the goods, from saffron milk cap mushrooms early in the year, to these perfect pine cones ready for decorating the tree. 

A soak in boiling water and then a bake in the oven @ 100deg to kill the bugs and we are good to go.

Whilst working on something a bit special for @doingthethings_au we turned all this goodness into: 

Scorched Tomato Burratta w/ Carmalised Onion & Fennel & charred sourdough

Mussels in Pasatta w/ baguette 

Butterfly Chicken w/ herbed charred corn

Grilled Lettuce w/ creamy blue cheese dressing

There’a something special about harvesting your own food from nature and turning it into something special. 

It’s even better when you get to do it with some great mates. Went offshore with @terrigal_bluewater charters chasing kingfish. No kingfish about but there were some beautiful snapper! 


Snapper Ceviche on foraged Nasturtium Leaves with Toasted Sourdough Bread


- fresh snapper fillets, skin and bones removed, finely diced
- Juice of a few limes & lemon
- 1 small shallot, finely sliced
- 1 red / orange & green capsicum, deseeded and diced
- chopped chives
- chopped dill
- chopped coriander 
- Sea salt and freshly ground black pepper, to taste
- A handful of nasturtium leaves, thoroughly washed and dried
- Extra-virgin olive oil, for drizzling
- Sourdough bread, sliced and lightly toasted


1. Place the diced snapper in a non-reactive bowl. Add the lemon & lime juice, ensuring that the fish is completely covered. Cover the bowl with cling film and refrigerate for about 30 minutes. The fish should look opaque and slightly firm to the touch when it’s ‘cooked’.

2. Remove the fish from the fridge and drain off the excess lime juice, retaining a small amount to keep the fish moist.

3. Add the finely sliced shallot, diced capsicums, chopped chives, and dill to the snapper. Season with salt and pepper, and gently fold the ingredients together, being careful not to break up the fish.

4. Taste and adjust the seasoning, possibly adding more lime juice or salt as required.

5. Arrange the nasturtium leaves on a platter or individual plates, using them as a vibrant, peppery base for your ceviche.

6. Spoon the snapper ceviche onto the nasturtium leaves. Drizzle a little extra-virgin olive oil over the top.

7. Serve immediately with the toasted sourdough bread on the side, which guests can use to scoop up the ceviche or to enjoy as an accompaniment.

This ceviche combines the fresh zesty flavours of the ocean with the peppery taste of nasturtium leaves, creating a delightful appetiser, especially when paired with the crunchy texture of toasted sourdough bread.

One of the most beautiful tools I own (that we haven’t made ourselves) is my @gransforsbruk splitting axe. 

So beautifully presented, & well built, this high-end splitting axe is made to work. The craftsmanship is stunning, with a hand forged blade, ground to a concave with a thin blade at the bit, giving it a sharp cutting edge that breaks the fibres apart. The broader part of the head then pushes the wood apart, creating an even split and nice uniform blocks of wood for your fire.

Thanks to the team from @tomsoutdoors for being so obliging and express posting this beauty to me so I can split wood on the weekend.

We all need our space. And, this my space.

A place where we gather, connect, relax, eat, drink, celebrate, cook, and create. 

Very grateful for the abundance of areas we can use to prepare, to cook, to eat, to sit, to enjoy. 

Everything has a place, with everything we need to enjoy all elements of cooking with fire. A garden to support the herbs we use regularly, a wood-stack which never goes empty and always provides enough fuel on hand, a large table for 20+ people to sit at.

Imagine this, two @rosewood_farm_kv lamb racks, with fat cap on. Beautifully seared w/ herbed camomile in our @solidteknics pans, and then roasted inside our woodfire oven to perfection. 

Complimented with produce sourced from @harrisfarmmarkets in particular:

🦆Duck fat roast potatoes w/ seasoning & rosemary.

Scorched Tomato Burrata w/ caramelised Fennel & woodfired sourdough baguette🥖 

Entrees ro tonight dinner was something a little special. I had this stunning bottle of @ochotabarrels Surfer Rosa, Pinot Noir Grenache, and I wanted to make something special to go with it. 

This burrata using @harrisfarmmarkets Burrata, complimented by their sourdough baguette, and our home made pickled fennel. So good!
